SPINACH AND ARTICHOKE DIP
Combine 1 block of cream cheese, 1/2 cup sour cream, 1 spoonful of mayo, and 2 teaspoons of minced garlic. Next, add 3/4 cup grated Gruyere cheese, 1/2 cup mozzarella, and 1/2 cup Parmesan. Stir in a few handfuls of fresh spinach and 1 jar of marinated artichoke hearts. Sprinkle with a little of any previous cheeses. Bake at 350 for 30-45 minutes. Serve with tortilla chips or crackers.
BUTTERNUT SQUASH MAC & CHEESE
Roast butternut squash at 375 degrees for 45 minutes, or until fork tender. Remove seeds and toss. Scoop squash into bowl and set aside. Boil (salty) water and add 2 cups elbow noodles. In seperate large sautee pan, whisk together 3 tbsp butter and 2 tbsp flour. Add in 2 cups grated sharp cheddar cheese. Keep whisking! Add in 1 cup of skim milk, 1/2 at a time. Continue whisking until creamy. Add in 1/3 cup of plain greek yogurt (Or sour cream) and a sprinkle of black pepper. Add cooked noodles into pan and stir. Add into baking dish, top with grated sharp cheddar and bake at 350 degrees until warm and bubbling!
